1 package Gardein Chipotle Lime Crispy Fingers (bake according to package instructions)
3 handfuls of spring mix baby greens
1/2 orange bell pepper, sliced and chopped into small pieces
3 lime halves for garnish

Dipping sauces:
Creamy Lime
4 TBL Veganaise
juice of 1 lime

Squeeze lime juice into veganaise in a small bowl and mix well. Consistency should be thin enough to drizzle.

Cayenne Garlic:
4 TBL Majestic Garlic spread
cayenne pepper (about 3-4 shakes), to your liking

Combine ingredients in a small bowl and mix well.

I am torn between both sauces. I enjoy them equally with this dish and both go well with a side of baked fries. Plate as shown in picture. Be sure to eat the greens and bell pepper with the baked tenders and dipping sauces!

1/4 round (1.5 oz) dairy-free blue cheese, crumbled (Soy Bleu by Veg Cuisine)
1 TBL olive oil
1 tsp balsamic vinegar
1 Gardein Beefless Burger (frozen)
1 slice of cheese by Galaxy Nutritional Foods Rice Cheddar Flavor
1 English Muffin by Food For Life (Living 7-Sprouted Grains)
handful of baby greens
1 slice of red onion, finely chopped

In a small bowl, crumble in blue cheese, add oil and balsamic and lightly mix to combine.

In a small frying pan, cook frozen burger according to package instructions (you can choose to grill instead). Once done, add on cheddar cheese slice and cover for 30 seconds to melt.

While burger cooks, toast english muffin. Top toasted bottom half of muffin with baby greens and red onion. Then lay on the cheddar cheese burger and top with the blue cheese mixture.

3 cups cooked rice (long grain white or brown)
2 cups cut raw broccoli tips, rinsed
2 TBL sesame oil
1 package (9oz) Gardein Beefless Tips (frozen)
1 clove garlic, pressed through garlic press
1/4 cup scallions, sliced
1 TBL tamari

In a small sauce pan, add broccoli and a little water to cover the bottom of the pan. Put the lid on and steam until tender. Drain water and set aside.

While broccoli is steaming heat wok on medium to high heat. Add in sesame oil. Once oil is hot, add in frozen Gardein Beefless Tips and saute for 4 minutes, turning in pan to brown all sides. With 1 minute left, mix in garlic and scallions. Once done, add in steamed broccoli and tamari and toss to combine. Serve over your favorite rice. Garnish with additional scallions.

1/2 cup uncooked quinoa
1/2 tsp kosher salt
dash of pepper
1 clove garlic, pressed through garlic press
2 TBL extra virgin olive oil
2 TBL lemon juice
1/4 cup finely chopped parsley (curly)
8-12 small cherry tomatoes (use half red and half yellow), sliced in half
1 cup chopped cucumber (English goes well)

Cook quinoa according to package instructions. Once done, transfer to a bowl to cool until ready to use.

Mix remaining ingredients in a medium bowl. Add quinoa and gently toss to combine. Serve with Yves Lemon Herb Chicken Skewers (shown) or Gardein Beefless Tips.

1 frozen package Gardein Mandarin Orange Crispy Chick’n
1 cup bell peppers (orange, yellow & red), cut into bite-size pieces
1/4 cup diced scallions
2 cups of your favorite already prepared grain (long grain, brown or wild rice, or quinoa).

Prepare Gardein Chick’n according to package instructions. Dice bell pepper and scallions. When you add in the sauce to the chick’n, also toss in the bell peppers and scallions. Serve half of the chick’n bell pepper mixture over 1 cup of your favorite grain (long grain rice, brown rice, wild rice, or quinoa).

What vegan products should I use instead of egg, dairy, meat, and other animal products?

Use the conversion list on my substitutions page to learn what you can use in place of animal ingredients .

Remember a few tips:

*Read ingredients* to make sure you are buying vegan (meat and dairy free/egg free) products. Beware of animal bone char and animal derivatives. Also, some brands make both a vegan and non-vegan version, which could contain dairy, so read ingredients. Many products are gluten-free and may be labeled this way on the packaging, but read ingredients. Always avoid HFCS (high fructose corn syrup). FYI, the corn industry is trying to change this name, which would take some time if it gets approved. It’s their way to trick consumers.

 *Add Flaxseed* (finely ground) to salads, soups, pastas, even ice cream (soy or rice based, of course). My favorite dessert is Purely Decadent Vanilla Ice Cream with a teaspoon of Flaxseed and a teaspoon of salted sunflower seeds. Yum! Flaxseed is rich in Omega-3, 6 and 9 Fatty Acids and is a great source of Fiber. It also mixes great in shakes and smoothies. You can always use flax oil, but do not heat the oil as it gets a bitter taste. Instead, add to already prepared heated foods.

You can buy your vegan products at some chain grocery stores, or try Whole Foods for more specialty items, Trader Joes, or any other health food store. Always ask your store to carry a product. They will special order it for you. I do this every so often at Whole Foods.
