½ cup all-purpose flour
1 cup Bob’s Red Mill Rolled Oats
¼ cup Earth Balance, softened
¼ cup brown sugar
4 cups frozen berries (used mixed or any of your favorites)

Preheat oven to 375 degrees F. In a medium bowl, mix together the flour, oats, Earth Balance, and brown sugar until combined. In a 8” or 9” baking dish, lay in frozen berries. Crumble flour oat topping over the berries to cover. Place a piece of aluminum foil under the pie dish to catch any spills. Bake for 65 minutes. Serve warm garnished with a scoop of vanilla soy ice cream or some SoyaToo Rice Whip or Soy Whip topping.

*can make in individual ramekins if preferred.

2 cans 14 oz each cannellini beans
1 bunch of asparagus, rinsed and cut into bite-size pieces (discard bottom 2 inches)
2 cloves garlic, pressed through garlic press
2 TBL olive oil
1 TBL Earth Balance
Lemon juice (about 1 TBL)
Daiya
Daiya Mozzarella Shreds (1/4 cup to mix in and more for garnish-Optional)
Salt to season

In wok or large sauté pan, add olive oil, Earth Balance, garlic and asparagus. Sauté for 3-5 minutes on medium to high heat. Add cannellini beans with juice from cans. Bring to mild boil to thicken sauce. Cover while boiling and reduce to low simmer for about 5-7 minutes, stirring every few minutes. Sauce will thicken and turn to a creamy texture. Once done, add in lemon juice. Stir to combine and serve in bowls. Season with salt and garnish with a sprinkling of Daiya Mozzarella Shreds.

1 ½ lbs fresh blueberries (or 24 oz frozen)
½ cup light brown sugar
Juice from ½ lemon (discard seeds)
1 tsp cinnamon
2 TBL cornstarch or arrowroot powder
2 TBL cold water
1 baked pie crust 9” (check ingredients if buying frozen crust or make your own)

In a large saucepan, heat the blueberries over medium-high heat until they begin to boil. Simmer gently for 10 minutes.

Add brown sugar, lemon juice and cinnamon. Simmer for 2 minutes.

Mix the cornstarch or arrowroot well with the water. Pour mixture into the simmering blueberries while stirring. Cook and stir until mixture becomes clear and thick. Continue to cook for 1 minute. Remove from heat and cool.

Spoon mixture into already baked pie crust and refrigerate for 2 hours before serving. Whip up SoyaToo Soy Whip to stiff peak and put a dollop on your slice of pie. Garnish with mint sprig. This is a healthy dessert recipe. Blueberries are rich in antioxidants.

3/4 cup walnuts (raw halves & pieces)
1/3 cup extra-virgin olive oil
6 cups packed baby spinach leaves, washed and dried
2 TBL white wine vinegar
course salt and freshly ground pepper to taste

In a small saucepan, add olive oil and walnuts and toast over medium to low heat, stirring occasionally to brown all sides, about 11 minutes.

In a large bowl, toss spinach leaves with vinegar. Season with salt and pepper. Plate and top each serving with warm toasted walnuts and drizzle warm olive oil over each salad. Serve immediately.  Serves 4

1 cup quinoa
2 cups water (use Imagine no-chicken broth or vegetable stock instead to add more flavor)
2 TBL olive oil
1 medium brown onion, finely chopped
2 cloves garlic, pressed through garlic press
1 1/2 cups sweet potatoes, chopped
1 tsp cumin
2 handfuls of fresh baby spinach leaves
2 TBL lemon juice
1 TBL Braggs or tamari
1 TBL maple syrup
1/4 cup sliced almonds (can use chopped nuts, like almonds, walnuts or pecans)
salt and pepper to taste

1 medium red bell pepper, core removed and chopped adds more color and crunch (Optional)

In a medium saucepan, add water and quinoa and stir. Bring to a boil, then cover and reduce heat to low and simmer for 15 minutes. Fluff with a fork and set aside to cool.

In a large skillet on medium heat, heat oil and add in onion, garlic, and sweet potatoes and saute until sweet potatoes are tender but firm to the bite.  Add in cumin (if using bell pepper, add in now) and saute for 2 minutes. Set aside.

If using chopped nuts, toast in a small saucepan over medium to low heat until toasty brown, about 8-10 minutes, shaking the pan to evenly toast all pieces.

In a large bowl, whisk together the lemon juice, Braggs and maple syrup. Add spinach leaves and toss to coat. Add in quinoa, sweet potato mixture, and nuts and stir gently to combine. Salt and pepper to taste. Serve warm or chilled.

1 lb dried penne pasta
2 TBL olive oil
8 oz package fresh mushrooms, stems removed and sliced
1 clove garlic, pressed through garlic press
1 package Tofurky Italian Sausage (use 3 of the 4 sausages, diced into bite-size pieces)
1/2 cup pasta water (from penne you cook)
1 cup Silk Soy Creamer
1/4 tsp salt
fresh ground pepper to taste
1/2 cup SoyaKaas grated parmesan (soy parmy) in can
1 cup Daiya mozzarella cheese (divide into two 1/2 cups)

In large pot, cook penne pasta until done to your liking. Reserve 1/2 cup of this pasta water once pasta is done cooking. While pasta is cooking, in a skillet heat olive oil on high heat and add mushrooms and garlic and saute for 4 minutes. Add in diced sausage and saute for another 4 minutes on high heat. The pasta should be done at this point. Drain pasta in colander, reserving 1/2 cup of the pasta water.

Add 1/2 cup of pasta water, Silk creamer, salt and pepper to taste to the mushroom sausage mixture. Boil over high heat to thicken, stirring occasionally, about 4 minutes. Turn on broiler.

Place pasta in 3 quart baking dish and pour mushroom sausage mixture on top. Sprinkle SoyaKaas parmesan and 1/2 cup only of Daiya mozzarella evenly over the top. Turn pasta cheese mixture in baking dish to gently combine. Lightly salt top of mixture. Finish off by sprinkling remaining 1/2 cup of Daiya mozzarella on top. Broil until cheese is melted and slightly golden brown in some areas, about 5 minutes.

Serves 6

1/4 cup taco seasoning, fill with water to 1 cup line and stir
taco shells
Daiya shredded cheddar cheese
shredded lettuce
sour Cream (Tofutti or Follow Your Heart)
red bell pepper (diced into bite-size pieces)
diced scallions or chives
salsa
guacamole

In large skillet or wok, add olive oil and soy crumbles. Heat medium to high and toss for 3-5 minutes.  Add taco seasoning mixed with water, cover and simmer for 5 minutes.

Heat taco shells in oven according to instructions. 
Layer taco shells with cheese, crumbles, more cheese, lettuce, sour cream, red bell pepper, and scallions. Serve with sides of salsa and guacamole, or layer these in if preferred.

Diabetics, use iceberg lettuce cups instead of taco shells.

Tip: I like to spoon the sour cream into the bottom corner of a small zip-lock baggie and seal closed, leaving a small section unsealed to let the air out. Snip the bottom corner (small snip) and squeeze out the sour cream into taco shells. You can do the same for the guacamole. This lets you control the amount you use and disperse it evenly in the taco shells.

1 can white beans, drained and rinsed
1/2 cucumber, peeled and cut into bite-sized pieces
cherry tomatoes (red and yellow)
red onion, diced
1/2 avocado, diced into small pieces
1 TBL red wine vinegar
1 TBL extra virgin olive oil
sea salt
pepper

Gently toss all ingredients in a medium sized bowl. Salt and pepper to taste. Serve with pita chips.
