1/2 cup of brazil nuts, soak in water for at least 4 hours, then drain
1 1/3 cups of water

In blender, add nuts and water. Use the chop, puree, and liquefy settings to blend until smooth (several minutes). Strain mixture through a cheesecloth into a bowl. Save the nut milk in the bowl to use in hot cocoa or creamer in your coffee or tea. Scrape off the ricotta-like cheese in the cheesecloth and store in a sealed container until ready to use. Keep refrigerated. Mix in with a red pasta sauce for a rich and creamy texture, or in hot cocoa for a rich and satisfying drink.

Makes 3/4 cup ricotta-like cheese and 1 1/4 cups of nut milk
